The menu is dreamed up by the chef each evening and includes such favorites as warm Maine lobster with shaved fennel, cucumber and sorrel salad, and sautéed wild red snapper with broccoletti and confit onion. Among the many appealing entrées are the sautéed Atlantic salmon filet with Pinot Noir sauce, and the signature lobster Thermidor. Prices are high, but worth it. Warning. Save room for the Eiffel Tower dessert; a symphony of chocolate including a beautiful white chocolate replica of the ”tower”. A must for chocoholics.
Guy Savoy restaurant at Caesar's Palace
For Reservations: call 1-877-346-4642 When you open the monumental dark wooden door into Guy Savoy’s super- chic Las Vegas restaurant, you should also open your mind. Veer left into the Champagne bar on the second floor of the Augustus Tower of the Caesars Palace. Raise your eyes to the high cathedral-like ceiling. Architect Jean-Michel Wilmotte, who designed the original Guy Savoy in Paris, has designed a deliberately simple yet elegant high temple of gastronomy. In the kitchen, executive chef Damien Dulas served as Guy Savoy's right-hand man in the Paris restaurant, and executive sous chef Adam Sobel previously was chef de cuisine at Bradley Ogden, also in Caesars.
The menu is 90 percent the same as the Paris restaurant. The other 10 percent is an accommodation to the U.S. market, Franck Savoy says.
"The United States has great produce, oysters, fish and beef. There is no beef on the Paris menu, because beef there is inconsistent.
This is the first time we've had beef on the menu in a Guy Savoy restaurant." A wine wall at the restaurant's entrance contains 1,000 bottles, and there is a 15,000-bottle wine cellar in the basement built especially for Restaurant Guy Savoy.

Among the imaginative appetizers are warm Maine lobster with spring mix, gold beet salad and pomegranate dressing, and Muscovy duck breast confit over wilted spinach and artichoke salad with raspberry vincotto. Entrées include gifted executive chef Luciano Pellegrini's sautéed pancetta-stuffed day boat jumbo sea scallops, and pan-roasted veal rack with mushrooms and polenta.
